At the same time a possibility of the perfect weather for ice wine arises. Ice wine is a rare and most amazing type of wine. Because of the high value of ice wine many winemakers desire to manufacture ice wine. Every wine maker wants to sell ice wine at high prices in the market.
Producing ice wine completely depends on the weather condition. For making ice wine the temperature should be between –13 and –8 degree Celsius. The chilly condition should remain at a stretch for a few days if you need to make ice wine. To produce ice wine the grapes should be fully ripened. When everything falls in place the wine makers brace up to make the prized ice wine.
Now let us explain how ice wine is made. In the night when temperature dips to the lowest the grapes get frozen, the fully ripened frozen grapes are handpicked from the vineyard. Only these kinds of grapes are used to make ice wine. In these grapes the water crystals get frozen with other vital properties in the grape. Then the grape gets warm during the harvesting process. Frozen water crystals take longer time than the other components to melt. The components remain suspended in the dense water crystals, and this makes the ice wine so special.
Very delicately but swiftly frozen grapes are pressed; in fact the whole process of making ice wine is very brisk. From every ripened frozen grape only one to two drops comes out. This is the reason why ice wine dense. To make a 375 ml bottle of ice wine, almost a full vine is required. The ice wine is fermented very slowly, up to seven to eight months. When the ice wine is ready to drink, it provides a magical taste. |
